Crunchy Lemon Muffins

Makes: 12 Muffins

A lovely crunch through the sugar dusted on the top through to a citrus tang in the muffin itself-yum!


Ingredients

  • 2 cups self-rising flour

  • ¾ cup sugar

  • 75 grams butter

  • 1 cup milk

  • 1 egg

  • Grated rind of 1 large or 2 small lemons

  • ¼ cup lemon juice

  • ¼ cup sugar


Method

  1. Heat oven to 200’C

  2. Line a 12-tin muffin tray with paper muffin cases

  3. Combine flour and sugar in a large mixing bowl

  4. Melt the butter and add the milk, egg and lemon rind and mix to combine

  5. Add the liquid mixture to the dry ingredients and gently combine so that dry ingredients are lightly dampened not thoroughly mixed

  6. Place in the oven and bake for 10 minutes or until the centre of a muffin springs back slightly when gently pushed

  7. While muffins are cooking combine sugar and lemon juice

  8. As soon as muffins are removed from the oven drizzle a little of the juice mixture over each muffin
