Muesli Square
I have very fond memories of this recipe. My Grandma used to make and send it to me during exam time when I was at University. A single bite takes me straight back.
It is a delicious square but it needs some love in the making process but the effort it worth it. You can use a mixture of whichever dried fruits you have on hand, and/or the quantity of muesli-just make sure that the volume of your dry ingredients remains the same.
Makes:
Ingredients
100 grams butter
¾ cup brown sugar
½ cup honey
½ cup peanut butter
1 ½ cups crunchy muesli
½ cup coconut
1 cup rice bubbles or cornflakes
1 ½ cups dried fruit
1 teaspoon mixed spice
1 teaspoon vanilla
Method
Line a sponge roll tin with baking paper
Put the butter, brown sugar, honey and peanut butter in a large pot and bring to a gentle boil, stirring constantly.
Stir whilst simmering for 8-10 minutes until mixture forms a soft ball in cold water. Keep stirring as this mixture is VERY prone to sticking
Tip in all the remaining ingredients and mix well
Press down hard into a sponge roll tin
Put in the fridge to set
When cold, cut and store in an airtight tin in the fridge
