Hummus

This makes one large bowl full.

Ingredients

  • 1 can chickpeas-drained

  • 2 large cloves garlic-crushed

  • 2 teaspoons ground cumin

  • 1/4 teaspoon chilli powder

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice

  • 1/2 cup natural unsweetened yoghurt

  • Salt and freshly ground black pepper to season


Method

  1. Blend all the ingredients together until smooth.

  2. Refrigerate until needed

  3. Serve with sliced vegetables, corn chips or your preferred crackers

    If you like the idea of fresh chickpeas-less salt and no preservatives- prepare your own by using dried chickpeas.

    Cover the chickpeas with 4 times their volume and soak overnight  (They will swell to 2-3 times their dry volume so make sure your container is big enough)

    Drain off all the water from the soaking and rinse the chickpeas

    Cover the chickpeas with fresh water and bring to boil for 5-10 minutes then reduce to a simmer for 60-90 minutes-leave the pot uncovered during cooking
