Toasted Almond and Coffee Slice

Makes about 20 slices

When making a crushed biscuit based slice it’s always a good idea to have some extra crushed biscuits on hand incase your mixture is a little wetter than you would like it to be.


Ingredients

  • 225 grams butter

  • 2 tablespoons instant coffee

  • 400 gram can sweetened condensed milk

  • 2 x 250 gram packets wine biscuits – crushed

  • ¾ cup desiccated coconut

  • ¾ cup whole toasted almonds

     

     

    For the icing

  • 100 grams butter

  • 1 cup icing sugar

  • 1 teaspoon instant coffee

  • 1 tablespoon boiling water


Method

  1. Line a 20 x 30 cm slice tin with baking paper

  2. Melt the butter in a large saucepan

  3. Add the coffee and condensed milk

  4. Simmer gently for 3 minutes – DO NOT BOIL

  5. Stir in the crushed wine biscuits, coconut and almonds

  6. Press the mixture into the lined sponge roll tin

  7. Refrigerate to set and cool

  8. Once the slice is cool, make the coffee icing following the outline below

  9. Allow icing to set

  10. Slice into fingers to serve

Stores well in an airtight container in the fridge

For the icing

  1. Beat the butter, sugar and icing sugar together until light and fluffy

  2. Dissolve the instant coffee in the boiling water and add to the butter mixture

  3. Beat until incorporated and the icing is pale and creamy
