Melting Moments

Makes 16 biscuits

With a slight retro feel, a single bite of one of these deliciously light ‘vintage cookies’ is all you need to remind you why it’s still worth making them today!

Ingredients

BUTTER FILLING 

  • 50 grams butter

  • ¾ cup icing sugar

  • ¼ teaspoon vanilla essence

  • 1 table spoon hot water

BISCUIT MIXTURE

  • 200 grams butter

  • ¾ cup icing sugar

  • 1 cup flour

  • ½ teaspoon baking powder

  • 3/4 cup cornflour


Method

BISCUITS

  1. Pre heat oven to 180’ C

  2. Line 2 x baking trays with baking paper

  3. Sift dry ingredients into a large bowl

  4. Whip butter and icing sugar until the mixture is very light  and fluffy. This will take a few minutes.

  5. With the mixer running on the lowest speed, slowly add the dry ingredients by the spoon full to the creamed mixture and combine well

  6. The dough will be soft

  7. Roll into balls the size of large marbles, gently flatten slightly between the palms of your hands

  8. Place, well-spaced, onto the baking trays

  9. Make an imprint with a fork

  10. Put trays in the oven and bake for 20-25 minutes until cooked through but not browning

  11. Remove from oven and allow to cool completely before assembling

FILLING

  1. Sift the icing sugar into a mixing bowl

  2. Cream the butter until it is light and fluffy

  3. Add the vanilla and mix to combine

  4. Gradually add the icing sugar to the creamed mixture

  5. Beat until smooth adding a little water, if necessary, to obtain the desired consistency

 

TO ASSEMBLE

Take 2 biscuits and sandwich together with a generous amount of the butter filling.

Store in an airtight container
