Oaty Lemon Slice

Makes about 20 slices


Ingredients

LEMON ICING

  • 50 grams soft butter

  • Finely grated juice and zest of one lemon

  • 2 cups icing sugar – sifted

  • I tablespoon boiling water (if needed)

  • Extra coconut – toasted or plain for sprinkling

BASE

  • 1 cup flour

  • 2/3 cup sugar

  • 1 cup desiccated coconut

  • 1 cup rolled oats

  • 100 grams butter

  • 1 tablespoon golden syrup

  • ½ teaspoon baking powder

  • 2 tablespoons boiling water 


Method

For the base:

  1. Preheat the oven to 180’C

  2. Line a sponge roll tin with baking paper

  3. Put the flour, sugar, coconut and rolled oats in a large bowl and stir together

  4. Gently heat the butter and golden syrup together in a small pot until the butter has just melted

  5. Dissolve the baking soda in the boiling water and add to the butter mixture

  6. Pour the butter mixture into the dry ingredients and mix to combine

  7. Press the mixture down firmly into the lined sponge roll tin (the back of a large spoon works well for this)

  8. Bake for 20-25 minutes until the top of the slice is golden brown

  9. Remove from the oven and set aside to cool

  10. Once the slice is completely cooled spread with the icing and store in an airtight container

     

For the icing:

  1. Mix all the icing ingredients together until they come together to a smooth consistency, using the boiling water to achieve this if necessary

  2. Spread over the slice

  3. Sprinkle with extra plain or toasted coconut if using

  4. Allow the icing to set before cutting into pieces
