Easy Onion Soup

Serves 4


Ingredients

  • 4 large red onions

  • 2 tablespoons butter

  • 2 tablespoons red wine vinegar

  • 2 tablespoons brown sugar

  • 1 ½ litres beef stock

  • 2 cups water

  • ¼ cup port

  • Salt

  • Ground black pepper

  • 2 tablespoons cornflour


Method

  1. Peel the onions and cut in half lengthwise then slice into wedges as if you were cutting an orange

  2. Put the sliced onions, butter, red wine vinegar and brown sugar in a large microwave friendly bowl

  3. Cover and cook on full power for 5 minutes

  4. Transfer to a large pot and cook on medium heat for a further 10 minutes

  5. Add stock, water and port and simmer for another 15 minutes

  6. Season with the salt and pepper

  7. Combine the cornflour with a little water and gently stir into the soup allowing it to simmer for a further 5 minutes to thicken

     

    If you don’t have or prefer not to use a microwave then this recipe can easily be done fully on the stove stop.  Just jump straight to step 4 and cook 40 minutes not 10

     This type of soup is traditionally served with some cheesy croutons floating on the top
