Baked Scroggin Bars

This is a great lunch box slice. You can use a mixture of whichever dried fruits and muesli you happen to have on hand-just make sure the volume of your dry ingredients remains the same.

Makes: 16 -20 pieces

Ingredients

  • 1 cup rolled oats

  • 2 cups toasted muesli

  • ½ cup coconut

  • ½ cup raisins

  • ½ cup dried apricots – diced

  • ½ cup flour

  • ½ cup brown sugar

  • 1 teaspoon baking powder

  • 1 teaspoon vanilla extract

  • ½ teaspoon cinnamon

  • 125 grams butter

  • 1/4 cup golden syrup


Method

  1. Preheat oven to 180’C

  2. Line a slice tin with baking paper

  3. Put all the dry ingredients and the vanilla extract in a large bowl, stirring to combine

  4. Melt butter and golden syrup together in a small pot

  5. Pour liquid mixture over dry ingredients and combine well

  6. Press the mixture firmly into the lined slice tin

  7. Place in the oven and bake 20-25 minutes

  8. Allow the slice to cool a little in the tin before slicing into pieces 

  9. Store in an airtight tin
