Banana Chocolate Muffin

Makes 12 Muffins

A great way to use bananas that are on the riper side….

Ingredients

  • 2 cups self-rising flour

  • ½ cup caster sugar

  • ½ cup chocolate pieces 

  • Pinch salt

  • 100 grams butter

  • 1 cup milk

  • 1 egg

  • 1 teaspoon vanilla essence

  • 2 ripe bananas


Method

  1. Heat the oven to 220’C bake setting

  2. Line muffin pans with paper muffin cups

  3. In a large bowl, combine the flour, sugar, salt and chocolate pieces

  4. In a microwave proof container or a small pot, gently melt the butter then add the milk, egg and vanilla and combine well

  5. Add the liquids to the dry ingredients and fold together so that is dampened but take care not to over-mix

  6. Put about ¼ cup muffin mixture into each paper cup

  7. Put tray in the oven and bake for 12-15 minutes

  8. Muffins are cooked when they spring back if gently pushed in the centre

Additional Info

Paper muffin cups are usually readily available in the baking section of the supermarket

For the chocolate pieces milk or dark or a mixture works equally well, simply depends on taste.  I usually just cut some from a larger block.
