Artichoke Dip

An absolute favourite any time of the year. This recipe originally came from none other than Pip McKay!

Ingredients

  • 1 cup of artichoke hearts

  • 1 cup mayonnaise

  • 1 cup green olives

  • 1 cup coarsely grated parmesan cheese

  • 2 cloves garlic-crushed


Method

  1. Put all ingredients except parmesan cheese in food processor

  2. Blend until ingredients are just combined and still coarse

  3. Transfer to a mixing bowl, add ¾ of the 1 cup parmesan cheese and gently mix

  4. Transfer to an oven proof dish

  5. Top with remaining parmesan

  6. Bake at 160’C for 20-30 minutes until golden

  7. Serve warm or cold with crusty bread, crostini or crackers
