Tuscan Antipasti

Ingredients

  • 1 medium red onion, finely diced

  • 1 teaspoon salt

  • 1 teaspoon red wine vinegar

  • 1 can borlotti beans, well rinsed

  • 1 handful chopped Italian parsley

  • 2/3 cup olives, pitted and chopped

  • ¼ cup olive oil

  • Crostini or crusty bread to serve


Method

  1. Put finely diced onion in a bowl, cover with water and add salt and vinegar and allow to rest 30 minutes

  2. Put ½ the beans in a medium sized bowl and mash to a coarse consistency

  3. Rinse the onions and add to the beans

  4. Add the olive oil, parsley and olives and season with salt and black pepper

    Serve with crostini, crackers or crusty bread
