Spiced Nuts

These nuts are great to have on hand as a bowl on their own with a drink or as part of a platter. They will keep in an airtight jar for several weeks. They also make a great gift packaged up in a special bag or jar.


Ingredients

  • 2 cups cashews

  • 1 cup almonds

  • 1 cup pumpkin kernels

  • 1 cup pecans

  • 2 cups macadamias

  • 2 tablespoons sunflower seeds

  • 3 tablespoons nigella seeds

  • 1 teaspoon sea salt

  • 1 tablespoon rosemary sprigs - cut up

  • 3 tablespoons neutral oil

  • 2 tablespoons honey

  • 1 teaspoon cayenne (more to taste)

  • 2 teaspoons ground black pepper


Method

  1. Preheat oven to 170’C

  2. Put the oil and honey into a small pot and warm gently to dissolve the honey

  3. Put all the nuts, seeds, salt and rosemary into a large bowl

  4. Pour over the honey and oil mixture and stir to combine

  5. Spread the nut mixture on a lined baking tray and roast 15-20 minutes until nuts are golden brown

  6. Remove from the oven

  7. Stir through the black and cayenne peppers

  8. Allow to cool then store in an airtight jar
