Prawn & Chorizo Skewers

Makes 24 pieces

This is a super easy nibble you can make in a flash and there never seem to be any left overs.

Ingredients

  • 24 frozen prawn cutlets

  • 2 sticks of chorizo

 

Toothpicks to skewer


Method

  1. Allow the prawns to defrost

  2. Once defrosted remove the tails if this has not already been done

  3. Slice the chorizo into discs approximately the thickness of the prawn-usually about 1cm

  4. Place a chorizo disc in the central curve of each prawn and skewer in place with a toothpick

  5. Refrigerate until ready to cook

  6. Heat a pan or bbq hotplate to a high temperature

  7. Using a drizzle of olive oil then quickly sear prawn/chorizo skewer on each side until prawn is cooked and chorizo browned

  8. Serve immediately
