Chocolate Mousse

Serves 6-8 as individual portions or one large dessert

Ingredients

  • 180 grams milk chocolate

  • 60 grams dark chocolate

  • 1 tablespoon unsalted butter

  • 2 tablespoons caster sugar

  • 3 eggs, separated

  • 1 cup heavy cream


Method

  1. Separate the eggs

  2. Put the chocolates, butter and sugar in a large microwave proof bowl

  3. Whip the egg whites until stiff peaks form when you drag a spoon through them.

  4. Melt the chocolate mixture carefully in the microwave-usually 30 second bursts, stirring carefully to dissipate the heat works well

  5. When chocolate is melted, sugar dissolved, and the mixture smooth add the egg yolks and combine well

  6. Alternately add a spoonful of the egg whites and then the cream, mixing well after each addition until all ingredients are combined and the mixture smooth and creamy

  7. Pour into selected individual serving dishes or one large bowl

  8. Place in the freezer to set

  9. When ready to serve, depending on the consistency preferred, remove from the freezer 20 minutes-one hour before serving

     

    This mixture can be used as the base for a chocolate mousse pie by pouring the mixture into a prepared cookie crumb crust
