Berry Compote
A beautifully textured and delicious sauce that combines well with ice cream, yoghurt or dolloped over meringues and pavlovas.
Ingredients
3 cups frozen berries, one type or a mixture
2 bay leaves
1 vanilla pod
1 cup caster sugar
Method
Put all the ingredients in a small stainless steel pot, stirring until the sugar has dissolved
Simmer gently for 15-20 minutes until the mixture has reduced and is nice and syrupy
If storing, keep the bay leaves and vanilla in the compote, if serving remove them
